A good book that I used was "how to make a noise", it is a few years old now, but dont let that put you off as the principales are still the same.
There is a free pdf for download on the authors page, the link for the free stuff is half way down.

yes i have that book and it's good. but the best tutorial i've ever seen for synthesis was a video one that went through the synth in logic.

even if you don't have logic, the principles you learn by just watching this can be applied to any synth.
i really enjoyed jus opening Subtractor & Maelstrom in Reason and jus playing with the mentioned parameters. any synth will do as long as they have the usual ADSR path.
tried reading theory on these aspects & it jus boiled my head lol
in sayin that, the differences between subtractive & fm & other synthesis types is well served with some theory. makin patches is now much more efficient for me.
