I'm not sure how practical it would be. The buttons are really quite far apart as the surface is so wide, so it'd be very different to using a normal mixer, and also as it is all touch screen you don't have the same tangible feeling of the knobs, faders etc. The dude in the video is mixing pretty slowly, and I don't know how easy it'd be to do multiple commands simultaneously or quickly, as it is all wide apart and nothing to grab hold of. Again, I'm judging all of this from a youtube video and havent ever touched the thing itself, but I think I'd much prefer the "real" feel of a mixer in my hands to sliding my fingers across a screen, which I can;t imagine would be very precise.
